A healthy and delicious Veggie-Loaded Orzo Greek Salad featuring cooked orzo, colorful vegetables, and a homemade vinaigrette. This recipe pairs wonderfully with a nourishing DIY bone broth made from organic chicken, perfect for a wholesome meal.
In a large stock pot, add the entire chicken carcass and remove all white & dark meat.
Throw in all of the ingredients except for salt and pepper.
Bring everything to a boil, then reduce heat to medium/low and simmer (covered with a lid) for 2.5 hours.
Use a strainer to filter only the broth into containers or a tub.
Stir in the sea salt and pepper.
For the Orzo Greek Salad, mix the vinaigrette by combining olive oil, white wine vinegar, fresh lemon juice, dried oregano, garlic salt, minced organic garlic, dried parsley, ground pepper, and raw honey or agave in a bowl.
In a separate bowl, combine the cold orzo, chopped bell peppers, halved cherry tomatoes, diced cucumbers, and creamy feta chunks.
Drizzle the vinaigrette over the salad and toss to combine.
