Preheat your oven to 400 degrees and spray a 12 cup muffin tin with cooking spray.
Heat a large pan over medium high heat and add a splash of olive oil once it's hot.
Add the onions and sauté until tender.
Add the ground beef and seasonings, cooking until the beef is cooked through (about 3-4 minutes).
Add the canned tomatoes (drained) and continue cooking until almost all of the liquid is absorbed, stirring occasionally (about 5-7 minutes).
Place one wonton wrapper in the center of each cup in your prepared tin, pushing it down slightly to form to the cup.
Add 1 tablespoon of shredded cheese to each cup and place another wonton over the cheese layer, gently pushing it down.
Fill each cup with the ground beef mixture and sprinkle the remaining cheese over the top.
Place the tin in the oven and bake for 13-18 minutes, until the cheese has melted and the wontons are crispy, checking around the 10 minute mark.
Once done, run a sharp knife around the edge of each cup and pop them out of the tin.
Serve immediately with your favorite toppings and enjoy!
