A healthy and flavorful Caribbean-inspired Skillet Jerk Salmon dish featuring marinated salmon filets served over crispy brown rice with a fresh vegetable medley.
Add all the marinade ingredients into a food processor and pulse until a thick paste forms.
Season the salmon filets with the wet jerk marinade and marinate in the fridge overnight.
Heat canola oil in a large cast iron skillet over medium-high heat.
Add the salmon filets skin side down and sear until the skin is crispy, about 3-4 minutes.
Flip the salmon and cook for another 1-2 minutes, then remove from skillet.
In the same skillet, add the reserved onions and tomatoes from the marinade and cook for 1-2 minutes.
Stir in the cooked brown rice and sauté until it becomes crispy.
Add the salmon back into the skillet and serve immediately for a one pot meal.
