Delicious and healthy raspberry oat bars made with a crust of almond flour and oats, filled with a mixture of mashed raspberries, lemon juice, and coconut sugar, topped with extra crust for a perfect treat.
In a large bowl, combine almond flour, oats, baking powder, maple syrup, coconut oil, vanilla, and salt. Mix well.
Line the bottom of a 9 x 9 inch baking dish with parchment paper and lightly grease with coconut oil.
Add the crust mixture to the pan, saving about 1/2 cup for the top layer. Pat down the crust tightly and evenly.
In a pan, combine raspberries, lemon zest, lemon juice, coconut sugar, and vanilla. Mash the berries while cooking over medium heat.
Cook the berry mixture for 3-4 minutes then stir in cornstarch and cook for another minute. Remove from heat.
Pour the berry filling over the crust and use a spatula to level it.
Crumble the reserved crust on top of the filling.
Bake the bars at 400°F (200°C) for 30-35 minutes.
Allow the bars to cool completely before slicing into 16 squares and storing in the fridge.
