Delightfully simple and customizable fritters made with zucchini, potatoes, onion, and optional ingredients like bell pepper and kale. Perfectly crispy when cooked, these fritters are a great way to use up various vegetables.
Rinse zucchini and grate into a mixing bowl.
Peel and grate potatoes and onion into the bowl, then drain excess liquid by pressing mixture into a fine sieve or through cheesecloth.
Finely dice red bell pepper, chop or shred kale, and add both to the mixture.
Add salt, pepper, garlic powder, herbs, and flour, and mix together until well incorporated.
Roll mixture into balls and flatten into 2-3 inch patties. If too wet, add more flour a little at a time until it holds together.
Fill a frying pan with vegetable oil at least 1/2 inch deep. Cook fritters on medium to medium-high heat until golden brown, about 3-4 minutes each side.
Once cooked, remove from pan, sprinkle with sea salt, and allow to cool for a minute before serving.
For leftovers, reheat in a non-stick pan, with or without oil, before eating.
