15 mins prepServes 4
Delicious pasta dish featuring shrimp, asparagus, and a homemade pesto made with pine nuts, basil, and Parmesan. This dish is rich and creamy, complemented by cherry tomatoes and topped with more Parmesan cheese for added flavor.
1: Toast the pine nuts in a small pan over medium heat for a couple of minutes until lightly toasted. Watch closely to prevent burning.
2: In a food processor, combine the pesto ingredients (toasted pine nuts, basil, Parmesan cheese, olive oil, garlic) and pulse a few times. Avoid over-processing.
3: Taste for salt and pepper, adjusting if necessary.
4: Cook the pasta according to package instructions.
5: Toss the shrimp with 1 or 2 tbsp of the pesto until coated. Season with salt and pepper.
6: In a large skillet, heat 1 tbsp of olive oil. Add the shrimp and cook for about 2 minutes per side until pink and crisp. Remove from skillet.
7: Add the remaining 1 tbsp of olive oil to the skillet. Cook the asparagus for about 2 minutes until slightly tender.
8: Add the heavy cream to the skillet and bring to a boil. Stir in the remaining pesto.
9: Turn off the heat and toss in the cooked pasta, cherry tomatoes, and Parmesan cheese.
10: Serve warm and sprinkle with additional Parmesan cheese if desired.
