A delicious and simple Italian sausage and pasta soup packed with veggies, fresh baby spinach, and mini farfalle pasta. This easy soup is perfect for the whole family.
Line a plate with paper towel and set aside. Heat a large cast iron stockpot over medium high heat.
Add olive oil and once shimmering, add in the sausage. Cook until browned, about 6-8 minutes. Transfer to the prepared plate.
Drain off all but 1 tablespoon sausage grease, then add olive oil. Add diced carrots, celery, and onion. Sauté for 5-7 minutes until tender.
Add garlic and stir until fragrant, about 30 seconds. Then, add tomatoes, beef stock, and seasonings. Stir well.
Bring the soup to a boil. Once boiling, add uncooked pasta and cook uncovered about 7-9 minutes until pasta is tender.
Stir in the cooked sausage and spinach until wilted. Adjust salt and pepper to taste.
Serve with parmesan cheese and crusty bread. Enjoy!
