A quick and easy dish featuring orecchiette pasta combined with shrimp, broccolini, and cannellini beans. This hearty comfort food allows substitutions for various ingredients based on personal preference.
Bring a large pot of water to a boil. Season with 2 tablespoons salt & add the broccolini. Cook for 3 minutes or until the stems are slightly fork tender. Reserve cooking water and transfer broccolini to a bowl filled with ice water until cooled. Drain, cut into 1” pieces & set aside.
Add the pasta to the reserved cooking water & cook until al dente, around 10 minutes.
Meanwhile, add the olive oil & garlic to a cold sauté pan. Set over medium heat & gently cook the garlic until golden. Add the chili flakes & cook 1 minute. Add the shrimp, season with pepper & salt to taste & cook, stirring, until slightly pink, 3 minutes. Add the drained broccolini & beans & toss to combine. Taste for seasoning & adjust with salt & pepper as desired.
Add the cooked pasta along with ½ cup of the pasta water & cook, stirring, until reduced by half, 2 minutes.
Transfer to serving bowls, top with cheese & serve.
