10 mins prepServes 4
This dish features buttery white wine sauce, melty parmesan, and mozzarella cheeses, making it a comforting meal ready in just over half an hour. Enjoy it as a chest treat!
1: Cut the chicken in half lengthwise to make 4 thinner pieces. Sprinkle the chicken with garlic powder and salt & pepper on both sides, then coat the chicken in flour.
2: Preheat the oven to 400°F.
3: Add the oil and 1 tablespoon of the butter to a skillet over medium-high heat. Cook the chicken for 4-5 minutes on each side until golden. Transfer to a plate.
4: Add the remaining butter to the skillet, melt, then add in the mushrooms. Cook until the mushrooms release their water and get a nice sear (about 5-6 minutes).
5: Stir in the wine, chicken broth, and Italian seasoning. Let the sauce bubble for about a minute, scraping up any brown bits from the bottom of the pan.
6: Add the chicken back into the pan and spoon the sauce and some mushrooms over top. Remove from heat.
7: Top the chicken with the parmesan, then the mozzarella.
8: Place the skillet in the oven and cook for 5 minutes, then turn the broiler on and cook for several more minutes until the cheese has browned a bit. Alternatively, leave it in the oven for about 7 minutes.
9: Remove from oven and sprinkle fresh parsley on top. Serve immediately.
