These miso glazed mushrooms make a perfect vegan side dish or appetizer that's ideal for Christmas or any other special occasion. They are easy to make with just a handful of ingredients and are gluten-free and oil-free.
Start by boiling the mushrooms in a saucepan until fully softened. This usually takes 5-10 minutes.
Test the mushrooms by taking one out, waiting for it to cool down, and then testing with a knife or a toothpick.
Add the chopped onion to a non-stick frying pan and cook for 2-3 minutes until softened.
Prepare the glaze by stirring together the tamari, miso paste, apple cider vinegar, maple syrup, and water.
Drain and rinse the mushrooms, then add them to the frying pan, stirring for a minute to reheat and brown.
Pour in the glaze along with the arrowroot powder.
Cook for 2-3 minutes over medium heat, stirring, until the glaze thickens.
