These One Bite Mini Lasagna Roll Ups are a delicious twist on traditional lasagna, featuring layers of mozzarella, bolognese or marinara sauce, béchamel, and parmesan rolled into cooked lasagna noodles. They are baked until golden and served in a mini muffin tray, making them perfect for easy eating and entertaining.

Instructions

1: Heat the oven to 375°F.

2: Sprinkle a bit of cheese into the bottoms of a non-stick mini muffin tray.

3: Cook the noodles according to the package and drain.

4: Cut noodles into strips about 1 inch in height and 4-5 inches in length.

5: On the lasagna strip, spread on a bit of bolognese, then béchamel, then a light sprinkling of parmesan.

6: Roll up tightly then pop into the prepared mini muffin tin.

7: Repeat until all of your sauce and noodles are finished.

8: Top generously with shredded mozzarella and leftover parmesan.

9: Bake for 30 minutes or until the cheese is golden and toasty.

10: Let cool in the pan for at least 5-10 minutes.

11: Use a plastic offset spatula to pull them out.

12: Top with flat leaf parsley if desired and enjoy!
