Place your tofu between a few layers of paper towels and rest a pot/heavy pan on top to draw out the water for at least 20 minutes.
Preheat your oven to 200 C.
Crumble your tofu and add 2 tbsp of oil, tossing to coat OR spray on some oil after step 4.
On a baking sheet lined with baking paper, spread your tofu crumble out in one layer.
Bake your tofu for about 35 -45 minutes, mixing about halfway so it evenly cooks.
Mix your sauce ingredients and heat a little bit of oil. Add your ginger and white parts of the scallions and sauté for 1-2 minutes.
Add in your garlic and sauté for another 1-2 minutes. Add in your sauce until thickened and then add in your tofu crumble.
Mix until all coated and uniform in color.
Serve on rice with some sliced cucumbers, julienned carrots, and kimchi.
Garnish with some sesame seeds and the green parts of your scallions and enjoy!
