A flavorful and easy-to-make salad topped with sweet and tangy shrimp, refreshing lettuce, cherry tomatoes, and creamy avocado dressed with a honey lime vinaigrette.
In a small jar or bowl, add the olive oil, honey, lime zest, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Shake or whisk together until well combined.
In a large bowl, add the shrimp and pat them dry with paper towels. Add 3 tablespoons of the marinade to the shrimp and stir together until coated. Let them marinate for 15-30 minutes, stirring once to re-coat them.
While the shrimp marinates, arrange the lettuce onto a serving platter or a large salad bowl. Top with corn, cherry tomatoes, sliced avocado, and queso fresco.
In a large skillet over medium-high heat, add a couple teaspoons of olive oil. When hot, add the shrimp in a single layer and cook for 2 minutes before flipping. Cook for another 1-2 minutes until opaque.
Remove the skillet from heat and add the shrimp to the salad along with any sauce from the pan. Top with chopped cilantro and serve with remaining vinaigrette.
