A refreshing summer dish featuring shrimp, pearl couscous, and grilled romaine, dressed in a vibrant Green Goddess dressing. Perfect for warm weather with its combination of seafood, grilling, and fresh herbs.
Prepare pearl couscous according to package, and let cool.
Heat olive oil in a pan or cast-iron skillet on medium-high. Add the shrimp, and season with salt, pepper, and crushed red pepper. Cook for two minutes on each side and set aside to let cool.
Heat up your grill to medium-high. Brush the top of the romaine heads with olive oil. Grill for a few minutes on each side until just charred. Transfer to a cutting board and roughly chop.
In a bowl, combine the grilled romaine, pearl couscous, shrimp, and sun gold tomatoes.
Add the green goddess ingredients to a food processor or blender, and pulse until smooth. Add about 1/2 cup of the dressing to the bowl and toss until evenly coated. Use more dressing if needed, or save for another day. Serve immediately.
