A creamy tomato pasta recipe that's flavorful and made without heavy cream. This dish is versatile; you can pair it with any pasta or chicken and adjust the quantities as desired.
Bring a large pot of salted water to a boil and cook pasta till al dente.
In a large pan, melt butter over medium heat. Add the diced onion and cook for 5+ minutes, adding a splash of water if needed.
Stir frequently to avoid burning. Add Passata, stock (or diluted stock pot), seasonings, and simmer for a few minutes, stirring occasionally.
Add cream cheese and milk, mixing thoroughly. Simmer for a further 5+ minutes until melted and well combined.
Stir in the grated cheese until melted through the sauce.
Add the drained pasta to the sauce and mix together, optionally garnishing with parsley, basil, or chilli flakes.
