Creamy Tomato Basil Chicken

1: Cut the chicken in half lengthwise so you have 4 thinner cutlets.

2: Sprinkle them with the garlic powder and salt & pepper.

3: Coat the chicken in flour.

4: Add the oil and butter to a skillet over medium-high heat.

5: Once the pan is hot, add the chicken and cook it for about 4-5 minutes per side until golden.

6: Remove the chicken from the pan and set it aside.

7: Add the garlic, Dijon mustard, and chicken broth to the pan over heat.

8: Let it bubble for about 30 seconds while stirring to scrape up the brown bits.

9: Add in the cream, tomatoes, Italian seasoning, and basil.

10: Add the chicken back in and cook for another 5 minutes until the chicken is done and the sauce thickens.

11: Season with extra salt & pepper as needed and serve with parmesan if desired.
