This Loaded Cilantro Lime Cauliflower Rice is a flavorful and healthy alternative to traditional rice, featuring cauliflower, corn, black beans, ripe avocado, and fresh lime juice, making for a vibrant side dish or base for burrito bowls.
Cut the florets from the cauliflower core and pulse half at a time in a food processor until it resembles fine bits, slightly larger than couscous (should yield about 4 cups).
Place cauliflower on several sheets of paper towels, wrap, and press to remove excess liquid. Set aside.
Heat olive oil in a 12-inch non-stick skillet over medium-high heat. Add green onions and minced garlic and sauté for 30 seconds.
Add the cauliflower rice and sauté for about 6 minutes.
Add corn and black beans, season with salt, and warm through for about 1-2 minutes.
Remove from heat and add diced tomatoes, avocado, cilantro, lime juice, and lime zest. Gently toss to combine and serve warm.
