Delicious bell peppers stuffed with a savory blend of lean ground turkey, rice, and flavorful seasonings, topped with melted mozzarella cheese. Perfect for a hearty meal.
 Preheat the oven to 350°F.
In a skillet, heat the olive oil over medium-high heat and sauté the onion for about 5-7 minutes until translucent.
Add the ground turkey and cook until browned, then add in the garlic and sauté for another minute.
Add in the cherry tomatoes and seasonings, and cook for about 3 minutes, or until the tomatoes start to soften.
Dump in the rice, stir to combine, and slowly pour in the chicken broth.
Bring to a bubble, reduce heat, and simmer for about 12-15 minutes, or until the rice is almost cooked and the liquid has evaporated.
Meanwhile, cut the bell peppers in half, remove the stem, and cut out the white ribs. Place in a baking dish and set aside.
When the rice is tender, add in the 1/2 cup mozzarella and parsley, and stir well. Taste and adjust salt and pepper.
Stuff the mixture into the bell peppers and top with more cheese.
Add 3 tablespoons of water to the bottom of the dish, cover with foil, and cook for 20 minutes.
Remove the foil and bake for another 5 minutes until the peppers are tender and the cheese on top is melted.
Garnish with extra parsley if desired.
