Cheesy Broccoli Kale Pesto Pizza

1: Preheat oven to 350 degrees F.

2: Arrange flatbread on a foil-lined baking sheet.

3: Combine olive oil and minced garlic, spread evenly on each flatbread.

4: Bake for 8 minutes.

5: While flatbread bakes, fill a pot or skillet with 1 cup of water and bring to a boil.

6: Quickly blanch kale and broccoli for 1 minute, then drain and remove from heat.

7: Season broccoli and kale with salt and pepper as desired.

8: Once flatbread is ready, spread generously with pesto and top with a little mozzarella cheese.

9: Add blanched veggies and remaining cheese on top.

10: Bake for an additional 10-12 minutes, or until hot and melty.

11: Top with crushed red pepper flakes or an additional sprinkle of parmesan cheese if desired.
