Caramelized Lemon Butter Orzo
20 mins prepServes 4
A delicious one-pot dish featuring orzo pasta, kale, and caramelized lemon butter, topped with garlic breadcrumbs. It's an easy and flavorful meal that combines the zesty brightness of lemon with the richness of butter and Parmesan cheese.
1: Bring a large pot or Dutch oven of heavily salted water to a boil and cook orzo until al dente.
2: One minute before the orzo is done cooking, add the kale and submerge with a wooden spoon to wilt.
3: Drain and wipe out pot.
4: Rinse the lemon under cold water and cut into thin slices, removing any seeds. Finely chop the slices, zest and pith included.
5: Melt 2 tablespoons butter over medium heat. Add breadcrumbs and cook until golden brown, about 3 minutes.
6: Remove from heat and add grated garlic, mixing to combine. Season with salt and pepper to taste, then transfer to a small bowl.
7: In the reserved pot, melt the remaining 4 tablespoons butter over medium heat. Add chopped lemon and cook until fragrant and lightly softened, about 5 minutes. Season with salt.
8: Remove from heat and add the cooked orzo and kale along with Parmesan, tossing to coat in the caramelized lemon butter. Season to taste with salt and pepper.
9: Serve immediately in bowls with toasted breadcrumbs.
