This Cajun Shrimp Guacamole is a flavorful twist on traditional guacamole, featuring seared shrimp seasoned with Cajun spices mixed with creamy avocados and fresh veggies. It's a perfect dip for parties or a topping for your favorite dishes.
Melt 2 tablespoons of butter in a large sauté pan over medium-high heat.
Add 1/2 tablespoon of the Cajun seasoning to the butter and stir until it blooms.
Add half the shrimp and sear on one side for 2 minutes, then flip and sear for another minute. Season with salt and pepper, then remove from pan.
Add 1 1/2 tablespoons of butter and the remaining Cajun seasoning to the pan and bloom briefly.
Add the remaining shrimp and sear until cooked, then set aside.
Halve each avocado, remove the pit, and scoop the flesh into a large bowl.
Add the red bell pepper, scallions, onions, lemon zest and juice, and a pinch of salt and pepper to the avocados.
Mash everything together with a fork until smooth yet chunky, and taste for seasoning.
