Healthy and delicious BBQ salmon bowls featuring seared salmon with a flavorful pineapple salsa. This dish is filling and packed with fresh ingredients, making it a perfect meal option.
Remove the salmon from the package and let it sit at room temperature for 15 minutes.
Remove the pin bones but leave the skin on. Pat the salmon dry with a paper towel.
Heat an 11-inch non-stick skillet over medium/high heat.
Season the salmon with salt, pepper, and 2 tablespoons of olive oil right before adding it to the pan.
Place the salmon in the pan meat side down and sear for 4-5 minutes before flipping.
If the salmon is getting too dark, reduce the heat.
After flipping the salmon, add BBQ sauce and spread it evenly over the fish.
Reduce heat to medium/low and allow the salmon to finish cooking (about 12-15 minutes total cooking time).
In a large mixing bowl, combine diced pineapple, diced red onion, diced cucumber, chopped cilantro, diced jalapeno, lime juice, and salt. Toss until well combined.
To assemble, add rice to the bottom of your bowl, flake the BBQ salmon on top, and add the pineapple salsa.
Top with any preferred toppings and serve warm.
