A delightful dish featuring sautéed shrimp marinated in garlic and sauces, served alongside cilantro lime rice and fresh vegetables like green beans and red peppers.
Begin by making the marinade by blending garlic, oil, soy sauce, teriyaki sauce, kosher salt, sugar, and diced red pepper in a food processor or blender.
Place shrimp in a bowl and cover with the marinade. Mix to coat evenly and let it sit for 15 minutes.
After 15 minutes, separate the marinade from the shrimp but do not discard it; you can make a sauce out of it.
Boil rice in 4 cups of water, lower heat to simmer, and season with salt. Fluff the rice with a fork when water has absorbed and remove from heat. Cover with a lid and let sit for 10 minutes.
After 10 minutes, add lime juice and cilantro to the rice and mix with a fork.
In a large sauté pan, heat a few tablespoons of oil and add green beans. Cook for 5 minutes.
Add sliced red peppers, season with salt and pepper, and cook for another 10 minutes or until green beans are cooked to your liking. Remove veggies from the pan and set aside.
Add more oil to the pan and add shrimp in one even layer. Cook for 3 minutes.
Flip shrimp and cook for an additional 2-3 minutes. Add basil leaves and mix until they shrink. Move shrimp aside and add the veggies back to the pan to stay warm.
To make the sauce, bring the reserved marinade to a boil in a small saucepan, then lower to a simmer until it thickens.
Serve the shrimp topped with the sauce alongside the rice and enjoy.
