Balsamic Chicken with Orange Glaze
15 mins prepServes 4
A delicious Balsamic Chicken dish topped with an orange glaze sauce. The chicken is gently cooked until golden brown and then coated in a sweet and tangy sauce made from balsamic vinegar and fresh orange juice, paired beautifully with sautéed vegetables.
1: In a large sauté pan, add balsamic vinegar, orange juice, and zest. Turn heat to medium-high and reduce the sauce until thickened (about 15-17 minutes).
2: Season both sides of the chicken with salt and pepper.
3: In a separate pan, heat 1 tablespoon of olive oil over medium-high heat. Add chicken and brown for 5 minutes, then flip and cook for another 4-5 minutes until cooked through.
4: Transfer cooked chicken to a dish or add to the reduced balsamic sauce, flipping to coat the chicken.
5: In the pan used for the chicken, heat 1 tablespoon of olive oil over medium heat, add garlic and red pepper, and sauté for 1 minute.
6: Add mushrooms and cook for 3 minutes until tender, then add sliced tomatoes and cook for 1 minute.
7: Add asparagus and cook for about 3 minutes until tender. Season with salt and pepper.
8: Season chicken with thyme and basil, serve warm with vegetables.
